I know that in our parish in Chisinau we celebrate Saints Peter and Fevronia on May 1st, but I don't know if it's the same in Hérault. Why do the holidays start a week before?

Yes, in our parish in Chisinau it is fixed on May 1. In Hérault, however, they follow the western calendar, so they move the holiday a week earlier so that it still falls on Sunday. Have you ever been to their job there?
